Chocolate chip banana cake

Hey everyone! How is your week going?


Today I decided to share with you my famous chocolate chip banana cake recipe. This one is one of my go- to sweets if I am expecting company and my friends just love it. It is super easy to make and it only takes 30 minutes. Make sure you make a lot because this one disappears from the plates pretty fast. Let’s get cooking.

You will need:

3 bananas

2 eggs

1/2 cup of milk chocolate chips

1/2 cup of white chocolate chips

1/3 cup of sugar

1 1/3 cup of flour

1/2 cup of coconut oil

1 teaspoon of vanilla extract

1 teaspoon of baking powder

1 teaspoon of cocoa powder

1/2 teaspoon of baking soda

a dash of salt

Preheat your oven to 200 degrees (celsius) – 400 if fahrenheit

Make sure you mix your chocolate chips with an extra 2 tablespoons of flour

Mash your bananas with a fork and add the vanilla extract, eggs, and the coconut oil and mix everything together. I would recommend using ripe bananas that have the brown spots on them. They are not very appealing to eat but they are great for baking.

Add the sugar and mix well. Now it’s time for the dry ingredients.

Add the flour and the rest of the dry ingredients. Make sure you mix this well to avoid having lumps in the mixture.

Add your flour coated chocolate chips. You need this coating because this way you can avoid sinking, which happens a lot when you bake with chocolate chips.

Transfer the mixture into a cake tin. The one that I’m using is a 23 cm x 23 cm one. I like to add a thin layer of oil just to make sure nothing would stick to it. After this, the only step left is putting this into the oven and bake it for around 17 minutes. If 17 minutes is not enough, leave it in the oven and check every 2 minutes.

When it’s done, leave it to rest for 10 minutes and then you are good to go. Serve it with coffee, whipped cream, ice cream or anything you want.
